Ingredients
- 2 tbsp veg oil, plus more for frying
- 1/4 cup sambal oelek
- 1/2 cup sugar
- 2 pounds okra, trimmed and cut diagonally into 2-3 inch pieces
- 1.5 tsp oyster sauce
- 1-2 tbsp fried shallots
Preparation
Step 1
Fry shallots: thinly slice 1-2 shallots, fry in 350 oil until crisp. Set aside.
Heat oil in a wok or skillet over medium heat. Add chili paste and fry, stirring, 3 minutes. Add 2 tbsp salt and all but 1 tsp of sugar and cook until caramelized, 5 minutes.
Heat about 4 inches of oil in a medium pot over medium heat until a thermometer registers 375. Working in batches, fry okra until bright green, 30 seconds, then remove with a slotted spoon and shake off excess oil. Add okra to wok with chili sauce and toss about 1 minute. Add oyster sauce, 1/2 tsp pepper and remaining 1 tsp sugar, toss 30 more seconds. TRansfer to a serving bowl and top with fried shallots.
