Ingredients
- 2 c. chopped onion
- 8 stalks celery, chopped
- 4 carrots, diced
- 1 c. butter
- 1/4 c. + 2 T. flour
- 2 T. curry powder
- 16 cups chicken broth
- 2 apples, cored, peeled, chopped
- 1 c. white rice
- 4 skinless, boneless chicken breast, cubed
- salt and pepper to taste
- 4 pinches dried thyme
- 2 c. heavy cream heated
Preparation
Step 1
Saute onions, celery, carrots and butter in a large soup pot. Add flour and curry, and cook 5 more minutes. Add chicken stock, mix well, and bring to a boil. Simmer about 1/2 hour. Add apple, rice, chicken, salt, pepper, and thyme. Sinner 15-20 minutes, or until rice is done. When serving, add hot cream.
