Ingredients
- 3/4 cup (175 mL) finely shredded English cucumber
- 1-1/2 cups (375 mL) plain non-fat yogurt
- 1 large clove garlic, crushed
- 1 tbsp (15 mL) olive oil
- 1 tbsp (15 mL) finely chopped fresh dill or mint, optional
- 1 tsp (5 mL) lemon juice
Preparation
Step 1
Press shredded cucumber on several thickness of paper towel to remove as much water as possible.
In medium bowl, mix together cucumber, yogurt, garlic, olive oil, dill, if using, and lemon juice. Cover and refrigerate for 1 hour to allow flavors to develop.
