Grilled Vegetables

Ingredients

  • zucchini
  • yellow squash
  • baby carrots
  • miniature peppers
  • red potatoes
  • red onions
  • red potatoes
  • sweet potato
  • mini ears of corn
  • Marinade;
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 onion red onion,finely chopped
  • 1 TBS chopped fresh basil or 1 tsp dried basil
  • 1/4 tsp dried thyme
  • 2 cloves garlic,finely minced
  • 1/2 tsp kosher salt
  • 1/2 tsp pepper

Preparation

Step 1

Mix the ingred. for the marinade in a bowl or pulse in a food processor. Marinate the vegetables for at least an hour. Poke holes in the bottom of a 9x13 pan. Place veg.in the pan on the grill over indirect heat for 20 min until cooked through.
