Doctored Pickles

This is a "seat of your pants" recipe! Original recipe calls for Sour Pickles, but Dills are equally good. Perhaps the best part of these pickles is the garlic that comes with them! Use LOTS of Garlic.

Ingredients

  • 1 jar sour or dill whole pickles
  • 2 cups sugar. (Frankly, I've never measured it, I just eyeball it!)
  • Lots of thinly sliced Garlic (probably at least 5 cloves)
  • A couple of dashes Tabasco sauce (optional)

Preparation

Step 1

Drain and rinse the juice that the pickles are soaked in. Slice on an angle to expose as much surface as possible.

Put in a non reactive container and add sugar and garlic Stir and let the juices begin to form. Add Tabasco if using. Leave at room temperature for about 2-3 hours to be sure you have enough juices to completely cover the slices. Add more sugar if necessary.

Return the pickles and new juice to the original jar and refrigerate for 3-4 days, shaking or stirring periodically. Tasting during this time will let you know if you need more sugar or not. You don't want them too much like the original flavor. The correct balance will give you a new pickle with just a hint of the original flavor.
