Vegetable Beef Barley Soup-Slow Cooker

Ingredients

  • 1 lb lean stewing meat, cut into bite sized pieces
  • 1/2 C onions, chopped
  • 1/2 C cut green beans, fresh or frozen
  • 1/2 C corn, fresh or frozen
  • 4 C fat free, low sodium beef broth
  • 2 14.5 oz cans low-sodium stewed tomatoes
  • 2/3 C pearl barley, uncooked
  • 12 oz low sodium V8
  • 1 C water

Preparation

Step 1

Combine all ingredients in slow cooker.
Cover. Cook on high 5-7 hours.
