Greek Roasted Potatoes

Ingredients

  • 12 potatoes , peeled and quartered
  • 5 lemon
  • 3 cups chicken broth
  • 1/4 cup shortening
  • olive oil
  • garlic fresh or powdered
  • oregano
  • salt
  • pepper

Preparation

Step 1

1. Place peeled and quartered potatoes in large deep baking dish. Sprinkle or brush potatoes lightly with olive oil.
2. Pour chicken broth in pan, add juice of 3 lemons. Add water if necessary to make total depth about 1cm.
3. Season potatoes with salt, pepper, oregano, and minced garlic or garlic powder. Turn potatoes over and repeat seasoning.
4. Cut 1/4 cup lard or shortening into 1/2 X1/2 inch cubes and distribute evenly amongst potatoes.
5. Cover and cook in 375 degree oven about 30-40 minutes or until tender.
6. Uncover and place under broiler to brown and crisp as desired.
7. Squeeze remaining 2 lemons over them before serving.
