Ingredients
- 2 large sweet potatoes (about 2 pounds)
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1/4 cup scallions, diced (about 4)
- 1 red pepper diced
- 2 tablespoons chives, minced
- 1 orange zest only
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon paprika
- 1 pinch salt and pepper
- 1 dash hot sauce
Preparation
Step 1
Peel sweet potatoes and cube them into 1/2 inch cubes. Add them to salted boiling water and boil until they are tender, about 15 minutes.
2. Drain potatoes and let them cool slightly.
3. Meanwhile, dice other veggies and add to a bowl with mayo and greek yogurt. Mix well.
4. Season with paprika, apple cider vinegar, orange zest, and a dash of hot sauce.
5. Stir in the cook sweet potatoes and season with salt and pepper.
6. You can serve this at room temperature but I thought it was better chilled
