Cauliflower Soup

Ingredients

  • 2 cups water
  • 1 med. head cauliflower
  • 1 med. onion, sliced
  • 2 Tbsp butter
  • 2 Tbsp of flour
  • 1 Tbsp Instant Chicken Bouillon
  • 1/2 tsp. Celery Salt
  • 1/4 tsp. Salt
  • 1/8 tsp. pepper
  • 1 cup Half & Half
  • Ground Nutmeg

Preparation

Step 1

Heat water to boiling, add cauliflower and onion. Heat to boiling, reduce heat.
Cover and simmer until tender, about 10 minutes. Do not drain.
Pour cauliflower and onion with water into blender, cover and blend until smooth. (use emersion blender)
Heat butter in saucepan until melted and stir in flour.
Stir constantly until smooth & bubbly.
Remove from heat, stir in 1 cup water and heat to boiling, stirring constantly for one minute.
Stir in cauliflower mixture, bouillon, celery salt, salt, pepper & boil.
Stir in Half and Half. Heat until hot.
Sprinkle with Nutmeg.
