Lemon Meringue Pie

Ingredients

  • 1/2 cup Cold Water
  • 7 Tblsp. Cornstarch
  • 1 1/2 cup Hot Water
  • 1 1/4 cup Sugar, plus 5 tblsp. for meringue
  • 3 Eggs, separated
  • 1 Lemon, juiced and zest
  • 1 tblsp. Butter
  • 1 baked Pie Shell

Preparation

Step 1

Mix cold water with cornstarch to thin paste. Combine hot water and sugar in a double boiler and bring to a boil. Add cornstarch paste and cook until mixture begins to thicken. Continue to cook until thick and smooth, stirring constantly (15 minutes). Stir a small amount of mixutre into beaten egg yolks. Then add eggs to double boiler. Add lemon juice, zest and butter and blend well. Cool, stirring occasionally. Pour into baked pie shell and make meringue. Top lemon filling and bake at 325 until meringue is golden.
