Rack of Lamb

Ingredients

  • 1 cup fresh bread crumbs
  • 1/4 cup chopped parsley
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 - 1 1/2 lb rack of lamb
  • 2 tbsp dijon mustard
  • 2 tbsp melted butter
  • 1 clove garllic, crushed

Preparation

Step 1

In a small bowl combine bread crumbs and parsley. Protect exposed bones with heavy foil. Sear lamb fat side down over direct meduim heat for 5 min. Remove from grill. Spread mustard over top of rack. Sprinkle with salt and pepper. Spread the bread crumb mixture evenly over the top. Combine the melted butter and garlic and drizzle over the top. Continue grilling over Indirect Medium heat until medium rare, 145-degrees, about 20 min
