Pete's Best Hot German Potato Salad

Ingredients

  • 6 medium potatoes 1/3 cup vinegar
  • 6 slices bacon, diced 2 hard-cooked eggs, diced
  • 1 medium onion, minced 11/2 to 2 teaspoons salt

Preparation

Step 1

Boil unpeeled potatoes until tender. Fry bacon until crisp. Remove from skillet and fry onion in bacon fat.Peel and cut potatoes into 1/2 inch dice. Add bacon, vinegar, eggs, salt and mix well. Stir gently over heat until all ingredients are thoroughly heated through. Serve on platter garnished wit lettuce.
