Roasted Green Beans & Mushrooms

Preheat Oven to 450 degrees

Ingredients

  • 8 oz mushrooms, sliced 1/2" thick
  • 1 lb fresh green beans
  • 1 1/2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • salt and pepper
  • 2 tbsp grated parmesan cheese

Preparation

Step 1

Wash mushrooms and let dry. Cut beans in half so you have bite size pieces. Whisk together olive oil and balsamic vinegar. Place beans and mushrooms in zip-lock bag, pour the mixture over top. Make sure the beans and mushrooms are evenly coated. Arrange them on a large cookie sheet, spreading them out well so they are not crowded. Roast for 20-30 mins. start checking after 20 mins. Beans are tender crisp and mushrooms are cooked, and all liquid has evaporated from pan. Season with salt and pepper, then sprinkle with parmesan. Serve hot
