Grilled Corn Relish

Choose a firm-ripe avocado for this relish. At that stage it will slice easily and the pieces will hold their shape. Serve the relish with beet pork, or chicken.

Ingredients

  • 3 tablespoons lime juice
  • 1 tablespoon cooking oil
  • 2 cloves garlic, minced
  • 2 fresh ears of corn
  • 1 teaspoon chili powder
  • 1 small avocado, seeded, peeled,
  • and cut up
  • 1/2 cup chopped roasted red pepper
  • 1/4 cup snipped fresh cilantro
  • 1/4 teaspoon salt

Preparation

Step 1

COMBINE the lime juice, oil, and garlic in a medium bowl. Remove husks from corn. Scrub ears with a stiff brush to remove silks. Rinse com; pat dry. Brush corn lightly with some juice mixture. Sprinkle com with chili powder.
FOR A CHARCOAL Grill, place corn on the grill rack directly over medium coals. Grill, uncovered, for 25 to 30 minutes or till tender, turning occasionally.
FOR A GAS Grill, preheat grill. Reduce heat to medium. Place corn on the grill
rack. Cover and grill as above. -
MEANWHilE, add avocado, sweet pepper, cilantro, and salt to remaining lime juice mixture; toss well. Cut corn kernels from cob; stir into avocado mixture.
