FRESH SPINACH SALAD

Ingredients

  • 1 pound spinach
  • 3 eggs -- hard-cooked
  • 6 radishes
  • 1/2 pound bacon -- diced
  • 3/4 cup vegetable oil
  • 1/4 cup red wine vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon pepper -- crushed
  • 1/2 clove garlic -- crushed

Preparation

Step 1

Remove stems from spinach. Wash leaves carefully; drain. Wrap in paper towels to remove excess moisture; chill to crisp. Finely dice hard-cooked eggs. Thinly slice radishes. Put diced bacon in skillet and cook till crisp; drain. Put oil, vinegar, sugar, salt, mustard, pepper, and garlic in electric blender or covered jar. Blend or shake until well mixed. Toss spinach lightly with dressing. Turn into large bowl and top with eggs, bacon, and radish slices. Toss very lightly, once before serving.
