Cornflake Crusted Tilapia with Watermelon Salsa

Ingredients

  • 1/2 small seedless watermelon, rind removed
  • 1/2 green bell pepper, seeded and chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • Juice of 1 lime
  • Salt and freshly ground black pepper
  • 4 cups cornflakes cereal
  • 1 tsp dry mustard
  • 1/2 Tbsp ground coriander
  • 1/2 Tbsp paprika
  • 4 tilapia fillets
  • 2 Tbsp EVOO

Preparation

Step 1

Cut the watermelon flesh into 1/2 inch dice.

In a large bowl combine the watermelon, bell pepper, onion, jalapeno, and lime juice. Season with a little salt and pepper, stir to combine and reserve.

Plae the cornflakes cereal in a large plastic zipper food bag and zip the bag. Press the bag wth your hands or roll with a rolling pin to crush the flakes into crumbs. Set aside.

In a shallow dish, combine the cornflake crumbs,dry mustard, coriander, and paprika. Season the tilapia fillets with salt and pepper, then coat them thoroughly in the seasoned cornflake crumbs.

Preheat large nonstick skillet with EVOO over medium high heat. Once the oil starts to ripple, add the tilapia and cook for 3-4minutes on each side.

Serve warm with watermelon salsa.
