Ingredients
- 1 cup butter
- 2 cups sugar
- 3 eggs, beaten
- 1 cup unsweetened applesauce
- 2 tsp vanilla
- 1 tsp baking soda
- 1 tsp baking powder
- 4 tsp cinnamon
- 1/2 tsp fresh nutmeg
- 1 tsp salt
- 20 -oz can crushed pineapple (very well drained)
- 1 cup golden raisins
- 1 cup chopped walnuts
- 3 1/2 cups flour
- 1 cup coconut
- 3 cups finely grated carrots
Preparation
Step 1
Beat the butter, sugar, and eggs together until all three ingredients are thoroughly incorporated and the mixture is smooth, fluffy, and light yellow in color.
Make sure your applesauce is well drained. You don't really want to add liquid here. Add the applesauce to your bowl and mix in thoroughly.
Mix in the vanilla extract.
Blend in the baking soda, powder, cinnamon, nutmeg and salt.
Mix it well, until dough is smooth and is uniform in color.
Mix in pineapple, raisins, and walnuts.
Blend in flour, one rounded cupful at a time.
Stir in coconut. When it is incorporated, stir in carrots. Mix well.
Cover dough and chill for at least 2 hours.
Bake in preheated 350 F for 12 minutes.
When they are cooled, frost with cream cheese frosting.
