Chicken Thighs with Shallots and Spinach

1 chicken thigh with 1/4 cup spinach = 225 calories, 10 g fat, 338 g sodium, 8 g carbohydratem 24 g protein

Ingredients

  • 6 boneless skinless chicken thighs
  • 1/2 tsp season salt
  • 1/2 tsp pepper
  • 1-1/2 tsp olive oil
  • 4 shallots thinly sliced
  • 1/3 cup white wine or reduced sodium chicken broth
  • 1/4 cup fat free sour cream
  • 1/4 tsp salt
  • 1 pkg (10oz) fresh spinach

Preparation

Step 1

Sprinkle chicken with season salt and pepper. In large skillet with cooking spray, cook chicken in oil over medium heat for 6 minutes on each side or until chicken juices run clear. Remove and keep warm.

Insame skillet, saute shallots until tender. Add wine, sour cream and salt. Bring to boil. Cook and stir for 2-3 minutes or until slightly thickened. Add spinach, cook and stir until spinach is wilted. Serve with chicken.
