Ingredients
- 2 cups orzo
- 1/2 cup red wine vinegar
- 1/3 cup olive oil
- 1 1/2 teaspoons dried oregano
- 1 clove garlic, minced
- 1 1/2 cups chopped tomato
- 3/4 cup each red and green bell pepper, diced
- 3/4 cup feta cheese, crumbled
- 1/3 cup fresh parsley, chopped
- 16 olives
- 1/2 cup red onion, diced
- salt and pepper
Preparation
Step 1
Cook pasta until al dente. Drain and rinse. Place in a large bowl.
Whisk together vinegar, oil, oregano and garlic. Stir into hot pasta; set aside.
Stir in tomatoes, peppers, cheese, onion, parsley and olives. Season with salt and pepper.
