Ingredients
- 2 1/2 large zucchini
- 1 t. salt
- 2 or 3 garlic cloves, minced
- 2 T. olive oil
- 8 oz cream cheese, cubed & softened
- 3/4 c half-n-half or light cream
- 1/2 parmesan cheese
- pepper/ground nutmeg/parmesan
Preparation
Step 1
1. slice zucchini up into strings (8c)
2. cover with salt- drain 1 hour in colender
3. Rinse salt & drain
4. cook zucchini and garlic for 2-4 minutes- put in bowl
5. heat cream cheese & half n half in skillet until smooth
6. stir in 1/2 c. parmesan & zucchini
7. sprinkle with toppings
