Cauliflower Salad

Great for a large crowd, can use red-skinned peanuts for color. Makes 10 cups, Prep is 10 minutes plus refrigerate for 1 hour. From Feb 2010 Family Circle, Readers Exchange.

Ingredients

  • 1 large head cauliflower, chopped or shredded
  • 1 1/2 cups salted peanuts
  • 1 package (7 ounces) dried cranberries
  • 2/3 cup light mayonnaise
  • 1/3 cup sugar

Preparation

Step 1

In a large bowl add the cauliflower, peanuts, mayonnaise and sugar. Stir until well combined. Cover and refrigerate for at least 1 hour.
