Red Beans & Rice

Ingredients

  • 2 smoked ham hocks
  • 1 large onion minced
  • 2 tbls cumin
  • salt & pepper
  • 11/2 cups rice
  • 2 lbs kielbasa
  • 2 lrg cloves of garlic
  • 1 tsp oregano
  • 3 cans red beans
  • extra virgin olive oil
  • red pepper

Preparation

Step 1

boil ham hocks until tender about 1 h-11/2 hrs.
Add diced sausage
in oil saute' onions and garlic until limp,sprinkle in cumin, oregano and pepper. Drain all but 4- 41/2 cups of the liquid from the broth. Take out the hocks and save the good meat off of them chop it and return it to the pot. Add beans and sauteed ingredients. Simmer for 1/2 hour. Add in rice, cook until rice is done and serve.
