Fresh Corn Pudding

Ingredients

  • 3 cups corn cut from the cob (about 6 ears)
  • 1 egg separated
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 3 tablespoons butter or margarine softened
  • 1/4 cup milk
  • 1 teaspoon vanilla

Preparation

Step 1

Combine all ingredients (except egg white); stir well. Beat egg white until stiff but not dry; fold into corn mixture. Spoon into lightly greased 8" square baking dish. Bake in pre-heated 350 degree oven for 30 to 40 minutes or until set.
