Ingredients
- 1 Small Onion, diced
- 1/4 Cup Butter, melted
- 1/4 Cup Flour
- 1 tsp. Salt
- Dash of Tabasco Sauce
- 1 Cup Heavy Cream
- 1 Cup Milk
- 1 Pimento, sliced
- 1 Pint Scallops
- Buttered Bread Crumbs
Preparation
Step 1
Saute onion in butter until tender. Remove onion and discard. Blend in flour, salt and Tabasco sauce. Slowly stir in cream and milk, keeping mixture smooth. Place over low heat and stir until thickened. Remove from heat and stir in pimento. Place scallops in saucepan, with just enough boiling water to cover and boil for 6 minutes. Drain and add scallops to the white sauce. Fill buttered ramekins with this mixture, cover with buttered breadcrumbs and bake at 375 degrees until brown on top (about 20 minutes). Makes 3-4 servings.
