I Only Want Pizza!

Ingredients

  • 1 large eggplant 5 lengthwise slices
  • Olive oil spray as needed
  • Ragu pizza sauce (or no sugar added brand)
  • Provalone cheese to taste (or your favorite cheese)
  • Meat topping of your choice

Preparation

Step 1

Spray both sides of the eggplant slices with olive oil. Place on cookie sheet and brown on 1 side. (Watch carefully to make sure it doesn't burn)

Take out of the oven and top with sauce, cheese and other ingredients. Bake at 350 until cheese melts.

This recipe yields 4 servings; 3 carb grams plus topping per serving.
