I Only Want Pizza!
- 1 large eggplant 5 lengthwise slices
- Olive oil spray as needed
- Ragu pizza sauce (or no sugar added brand)
- Provalone cheese to taste (or your favorite cheese)
- Meat topping of your choice
Spray both sides of the eggplant slices with olive oil. Place on cookie sheet and brown on 1 side. (Watch carefully to make sure it doesn't burn)
Take out of the oven and top with sauce, cheese and other ingredients. Bake at 350 until cheese melts.
This recipe yields 4 servings; 3 carb grams plus topping per serving.
