Cheesey Scalloped Potatoes

Ingredients

  • 8 oz sharp cheddar, shredded
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups milk
  • 1 tsp. salt
  • 1/4 tsp pepper
  • 5 medium potatoes
  • 2 small onions

Preparation

Step 1

In saucepan, melt butter and whisk in flour. Add milk and stir constantly until slightly thickened. Add cheese and salt and pepper, stirring until cheese melts. Remove from heat. Spread half the cheese in bottom of 9 x 13 casserole dish.

Meanwhile, put potatoes (skins on) and onions thru food processor to slice thin.

Arrange over cheese in dish and pour remaining cheese on top. Bake at 350 for 1 hour.
