Mango BBQ Sauce for BBQ Chicken

Ingredients

  • 2 tbs olive oil
  • 1 onion, diced
  • 1 red pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 1 tsp freshly ground pepper
  • 1/2 tsp all spice
  • 1/3 cup red wine vinegar
  • 3 Tbs molasses
  • 2 Tbs Worcestershire sauce
  • 2 Tbs lime juice
  • 1/4 cup plain tomato sauce (not spaghetti)
  • 1 mango, diced
  • 2 jalapenos, minced

Preparation

Step 1

Heat oil in skillet over medium high heat. Add onions and cook until translucent, about 2-3 minutes. Add red peppers, garlic, salt, pepper and all spice, cook for 2 minutes more. Stir in vinegar, molasses, Worcestershire sauce, lime juice and tomato sauce, cook for 2 minutes more. Transfer mixture into blender and add mango and jalapeno. Blend until smooth.

Caution: Hot liquids tend to splatter through blender covers, so I always put a kitchen towel over top of cover while blending.

Put 1 cup of BBQ sauce into Ziplock bag with chicken and marinate for 1-2 hours.

Broil chicken on high for 12 minutes, turning once or BBQ chicken on BBQ until cooked through. Whichever way you choose to cook chicken, slather more BBQ sauce onto chicken right before done cooking.
