Mock Potato Salad

Ingredients

  • 1 head raw cauiflower, cut into 1 inch pieces
  • 2 hard boiled eggs, diced
  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 1/3 cup Mayonnaise
  • 1/2 tsp dry mustard
  • 1/2 tsp rice vinegar
  • salt & pepper to taste
  • fresh dill (optional)
  • dill pickle (optional)

Preparation

Step 1

Put about 1 inch of water into a covered medium saucepan. Place cauliflower pieces into pan, cover, and cook over medium heat about 6 to 8 minutes until cauliflower is slightly firm. Drain and immediately run cold water over cauliflower to stop it from cooking any further. Add all ingredients together, mix well and chill. Makes 6 servings.
