Ingredients
- 2 tablespoons oil
- 1/2 onion thinly sliced
- 1 package sauerkraut - (1 lb) rinsed, drained
- 4 cooked hot dogs sliced
- 2 cans reduced-sodium beef broth - (14 1/2 oz ea)
- 1 can water
- 2 teaspoons mustard
- 2 packets sugar substitute
- 1 bay leaf
- Salt to taste
- Freshly-ground black pepper to taste
Preparation
Step 1
Heat oil in a medium soup pot over medium-high heat. Add onion and cook 5 minutes, until softened. Stir in sauerkraut, hot dogs, broth, water, mustard, sugar substitute and bay leaf.
Simmer 5 minutes for flavors to blend. Remove bay leaf. Add salt and pepper to taste.
