  • Good beef roast
  • garlic
  • salt
  • pepper
  • beef broth
  • oregano
  • onion
  • carrot
  • celery

Preparation

Step 1

Cut slits all over roast and stuff with garlic slivers. Generously salt and pepper roast. Put in roasting pan with rack with cut up onion, carrot and celery in the bottom. Roast until rare, based on size of roast. Let cool overnight before slicing thin. With drippings add beef broth in pan and bring to boil, add garlic powder, oregano, salt and pepper to taste. Simmer for about 10 minutes. To heat beef, put 1 serving at a time in broth for about 30 seconds. Don't boil beef in broth.
