Orange Curd

Ingredients

  • 1.5 C orange juice (fresh squeezed is best!)
  • 1 C sugar
  • Grated zest of two oranges
  • 6 egg yolks
  • 1/2 cup (1 stick) cold, unsalted butter, cut into 1/2" pieces

Preparation

Step 1

Place orange juice in saucepan and bring to a boil over med heat. Let it simmer until reduced to 1/2 C. Transfer to double boiler. Add sugar, zest and yolks. Whisk to combine. Bring boiler to a simmer. Whisk the mix about 20 min. Whisk in butter one piece at a time. When combined, transfer to bowl, cover the surface with plastic wrap and place in regrigerator to cool
