Pasta di Tipton

I created this recipe right before I moved from Minnesota to Tipton, Mo. It was pretty much a "use what you have in the cupboard because I don't want to go shopping again" meal.

Ingredients

  • # 2 chicken breasts, pounded until relatively thin
  • # 1/2 cup white win
  • # 1/2 cup chicken broth
  • # 1/4 cup lemon juice
  • # 1 clove of garlic
  • # 1/4 cup olive oil
  • # 2 tbs butter
  • # thin spaghetti
  • # 1/2 cup shredded mozzarella cheese
  • # 1/2 cup grated Parmesan cheese

Preparation

Step 1

Mince garlic clove Oil saucepan Heat garlic on medium until oil starts to bubble Pound chicken breasts until even Cook chicken breasts, five minutes per side. After flipping and two minutes, add wine, chicken broth, lemon juice.. Turn heat to medium low. Continue to cook. Meanwhile, heat pasta water with handful of salt and splash of oil. Cook pasta per directions. Drain. When chicken is cooked through, remove from heat and cut into strips. Return chicken to sauce. Add pasta. Add cheese. Mix. Cheese will melt. Serve and enjoy.
