Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 tablespoons butter
- 1 cup sugar
- 1 egg
- 1/2 teaspoon salt
- 3/4 cup orange juice
- 1 cup chopped cranberries
- 1/2 cup chopped pecans
Preparation
Step 1
Preheat oven to 350°.
Grease and flour a loaf pan.
In a large bowl sift together the flour and baking soda.
In a separate bowl cream together the butter and sugar, and then beat in the egg and salt.
Alternately add the flour and orange juice to the creamed mixture. Mix well after each addition.
Fold in the cranberries and pecans.
Turn into the prepared pan.
Bake in a 350° oven for 1 hour.
