Thai Peanut Pasta Salad

Ingredients

  • Vegetables:
  • 1 head leafy red lettuce
  • 1 head leafy green lettuce
  • 1 jar slated peanuts-crushed
  • 1 red onion,pea pods,red peppers
  • Marinade:
  • 1/4 cup corn oil
  • 3 tablespoons sesame oil
  • 1 teaspoon crushed red pepper
  • 3 tablespoons honey
  • 2 teaspoons soy sauce
  • 1 box spaghetti
  • Dressing:
  • 2 tablespoons lemon juice
  • 1-1/2 tablespoons soy sauce
  • 1 teaspoon ginger
  • 1-1/2 tablespoons white vinegar
  • 1-1/2 cloves crushed garlic
  • 1 tablespoon sugar
  • 4 tablespoons olive oil

Preparation

Step 1

Vegetables:

Cut into pieces or julienne them and place in bags in refrigerator.

Marinade:

Boil the spaghetti and drain. Mix the marinade ingredients and pour over spaghetti and let sit overnight.

Dressing:

Blend all the ingredients together except the oil and vinegar. Once blended slowly add oil and vinegar.

Prior to serving pour pasta in bowl;add vegetables and mix with dressing. Add crushed peanuts and toss together
