Ingredients
- 2 Chicken Breasts, cubed pieces
- 2 Zucchini, sliced small pieces
- 1 cup Arborio Rice
- 1 Onion, sliced thinly
- 1/2 cup Peas, frozen
- 1 1/2 cups Chicken Stock
- Paprika
- Salt & Pepper
Preparation
Step 1
*Brown chicken breast cubes in a bit of oil in a frying pan and set side.
*Saute onion and zucchini in a pot. When soft, add paprika, salt & pepper and stir for another minute.
*Add rice and stir for another 2 minutes.
*Lower the temperature to very low and add the chicken stock, then top up with water to cover the rice.
*Add peas.
*Once it evaporates, add water again to cover to the top of the rice and allow to evaporate again.
*Repeat this process until rice has cooked.
