Lemon Sponge Pie

Ingredients

  • 1/4 Cup Butter
  • 1 Cup Sugar
  • 3 Tbs. Flour
  • 3 Eggs, separated
  • 1/2 Cup Lemon Juice
  • 1 Tbs. Lemon Rind
  • 1 1/2 Cup Milk

Preparation

Step 1

Cream butter and sugar until light and fluffy. Add flour gradually, mixing well. Beat in egg yolks. Add lemon juice and lemon rind. Slowly mix in milk. Fold in stiffly beaten egg whites. Pour into a 10" unbaked pie shell. Bake in hot oven at 425 degrees for 12 minutes. Reduce heat to 325 degreed and bake for 30 minutes longer.
