Ingredients
- 1 cup raw cashews or macadamia nuts
- 1 cup rolled oats
- 1/2 cup shredded unsweetened coconut
- 1/4 cup melted coconut oil
- 1 Tbs. sugar
- 1/4 tsp. salt
- 2 cups loosely packed frozen cauliflower florets, thawed
- 1/3 cup melted coconut oil
- 1/4 cup plus 2 Tbs. lemon juice
- 1 Tbs. vanilla extract
- 1/4 cup maple syrup
- 1/4 tsp. salt
Preparation
Step 1
cover nuts with water and soak for 6-8 hours
combine crust ingredients (oats, shredded coconut, oil, sugar, salt) in food processor until crumbly. Press dough into pan.
Make filling and combine with nuts. Combine in food processor until smooth. Place in crust and freeze for at least 3 hours.
