MEXICAN WEDDING COOKIES

Ingredients

  • 2 lbs. butter (unsalted)
  • 7 3/4 oz. powdered sugar
  • 2 1/2 lbs. a. p. flour
  • 4 c chopped toasted pecans
  • pinch of salt

Preparation

Step 1

. Cream the butter, and mix in all the rest ingredients

. Wrap and chill dough for 20 minutes

. Shape dough into 1" balls and bake at 325 degrees

. Let cookies cool for a minute, roll the still warm cookies in the powdered sugar, roll them a second time in the sugar once they are cooled
