Coconut Mango rice

  • Coconut – 1 cup, grated (I used frozen)
  • Raw mango – 1 (grated half of the mango & make a coarse paste of the other half)
  • Green chilies – 5 nos, slitted
  • Onion – 1, chopped
  • Ghee – 2 tbsp
  • Mustard seeds – 1/2 tsp
  • Cumin seeds – 1/2 tsp
  • Urad dal – 1 tsp
  • Split channa dal – 1 tsp
  • Ginger – 1 tbsp, grated
  • Cooked rice – 2 cups
  • Salt – to taste
  • Turmeric powder – 1/2 tsp
  • Curry leaves – a few

Preparation

Directions

Heat ghee in a pan, splutter mustard seeds & cumin seeds. Add the curry leaves. After 10 seconds add the urad dal & channa dal and fry well.

Add the onion & green chilies. Once onions start turning golden brown add the grated ginger, coarse mango, turmeric powder & salt & fry for 3 minutes.

Then add the grated mango & half of the grated coconut. Mix & fry them well for 2 more minutes.

Now add the cooked rice & the remaining grated coconut. Mix gently till the rice is coated with masal.

Serve with raitha, pickle.
