Ingredients
- 1 package frozen chopped spinach thawed, drained well
- 2 cups mayonnaise
- 1/4 cup chopped white onion
- 1 small garlic clove minced
- 1 tablespoon lemon juice
- 1 medium cucumber cut round medallions
- Ripe olive slices or pimiento for garnish
Preparation
Step 1
Put first 5 ingredients in blender at high speed to mix well. Refrigerate at least 4 hours (overnight is best).
While very cold, form small balls with spinach mix and place each one on a cucumber medallion. Top with a slice of ripe olive or pimiento and arrange on serving plate.
