Ingredients

    package frozen chopped spinach thawed, drained well

  • 2

    cups mayonnaise

  • 1/4

    cup chopped white onion

  • 1

    small garlic clove minced

  • 1

    tablespoon lemon juice

  • 1

    medium cucumber cut round medallions

  • Ripe olive slices or pimiento for garnish

Directions

Put first 5 ingredients in blender at high speed to mix well. Refrigerate at least 4 hours (overnight is best). While very cold, form small balls with spinach mix and place each one on a cucumber medallion. Top with a slice of ripe olive or pimiento and arrange on serving plate.
