Thai Peanut Chicken

Ingredients

  • 1 cup Italian dressing
  • 3 tablespoons peanut butter
  • 4 boneless, skinless chicken breasts
  • 6 cups torn Romaine lettuce

Preparation

Step 1

Marinade:
Whisk together the Italian dressing and the peanut butter.

Put the chicken breasts in a Ziplock bag and pour 3/4 cup of the marinade over the chicken.
Refrigerate for 3 hours. Reserve the remaining 1/4 cup of the marinade for later.

Remove the chicken, discarding the marinade.
Grill chicken and place on top of the lettuce. Pour the remaining 1/4 cup of marinade as a dressing over the salad.
