CHICKEN CARBONARA

Ingredients

  • 1 lb. spaghetti
  • 2 T olive oil
  • 8 slices of bacon or pancetta diced
  • 1 onion finely diced
  • 1/4 c dry white wine
  • 1 clove minced garlic
  • 4 eggs beaten
  • 1 c heavy cream
  • 1/2 c grated parmesan cheese
  • 2 T chopped fresh parsley

Preparation

Step 1

. Cook bacon in a skillet in the olive oil until crispy, add in the onions and garlic, cook until soft, add in the wine and reduce

. cook the pasta, save 1/2c of pasta water, add to the skillet

. Combine the eggs and the heavy cream and stir into the skillet off the heat, top with the cheese and parsley
