Ingredients
- 2 slices bacon, cut into 1/4" dice
- 1 small shallot, minced
- 1 1/2 T balsamic vinegar
- 1 T lemon juice
- 1/4 t Dijon mustard
- 3 T olive oil
- Salt & pepper
- 1-1 1/4 lb broccoli crowns, cut into 1" florets, stems sliced 1/4" thick
Preparation
Step 1
In small saucepan over med. heat cook bacon, stirring occasionally, til crisp & golden, @ 5 min. With slotted spoon, transfer to dish lined with paper towels. Add shallot to pan & cook, stirring occasionally, til softened, 1-2 min. Add 1 T vinegar & scrape bottom of pan with spoon to dissolve browned bits. Off the heat, stir in remaining 1/2T vinegar, lemon juice & mustard. Gradually whisk in olive oil. Season with 1/4 t salt & pepper.
Steam broccoli to crisp tender.
Drizzle vinaigrette over broccoli & sprinkle with bacon bits.
