Coconut Macaroons

Ingredients

  • 4 large egg whites
  • 1 cup granualted white sugar
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1/2 cup cake flour
  • 2 1/2 cups sweetened coconut

Preparation

Step 1

Preheat oven to 325 degrees adn line two baking sheets with parchment paper.

In a stainless steel bowl, over a saucepan of simmering water, warm teh egg whites, sugar and salt. When this mixture is warm to the touch, remove from heat and stir in vanilla extract, flour and coconut.

Place small mounds (1 1/2 inch) of the dough on teh parchment lined baking sheet, spacing serveral inches apart. Bake for about 15 to 20 minutes or until golden brown.

Remove from oven and place on wire rack to cool.
