Ingredients
- 2 cups chicken broth
- 8 oz fresh brocoli spears
- 8 oz fresh cauliflower
- 1/2 cup red pepper strips
- 1/2 cup carrots, chopped
- 1/4 pd mushrooms, quartered
- SAUCE.
- 1/4 cup plain yogurt
- 1/4 cup low sugar apricot preserve
- 1/2 tsp lemon juice
- 1/2 tsp curry powder
- 1/8 tsp salt
Preparation
Step 1
Heat broth over medium high heat, Add brocoli, cauliflower, red pepper,carrots and mushrooms. cover and cook until tender. Drain.
Sauce instructions
Combine all ingredients in microwave, and then pour over vegetables.
