PASTA & BEAN SOUP

Ingredients

  • soup:
  • 2 cans great northern beans
  • (1/4 c olive oil)
  • (1 T minced garlic)
  • (8 c water)
  • (2 T vegetable broth paste)
  • 2 cans diced Italian style tomatoes
  • 1/4 c chopped fresh parsley
  • Remaining macaroni from Meal 6
  • (Salt & pepper to taste)
  • Pita Chips:
  • 3 oz grated Parmesan cheese
  • (1/3 c Olive oil)
  • (Italian seasonings)
  • (Minced garlic)
  • (3 T butter)
  • (Salt)
  • Pkg of pita bread, split

Preparation

Step 1

Combine all ingredients, except the pasta, into a lg stockpot. Bring to boil and simmer for apx 15 min. Add macaroni and let cook until soft. Top w/ Parmesan cheese.
Meanwhile blend in a blender, the first 6 ingredients. Spread on each pita round and place pitas under a broiler. Toast until golden brown. (Use up the rest of the mixture by adding to soup.)
