Lemon Frost (Low Calorie)

Ingredients

  • 1 egg white
  • 1/3 cup water
  • 1/3 cup nonfat dry milk
  • 1 beaten egg yolk
  • 1/3 cup + 2 tbsp. sugar
  • 1 tsp. grated lemon rind or 1/4 tsp. lemon extract
  • 3 tbsp. lemon juice
  • Dash salt
  • 3 tbsp. graham cracker crumbs

Preparation

Step 1

Combine egg white, water and dry milk. Beat to very stiff peaks. Blend slightly beaten egg yolk, sugar, lemon rind, lemon juice and salt. Gradually beat into egg white mixture.

Sprinkle 2 tbsp. of the graham cracker crumbs onto a refrigerator tray or 4" x 8" loaf pan. Spoon in lemon mixture and dust with remaining crumbs.

Freeze.
