Ingredients
- 2 Lbs. Red Potatoes
- 1/2 Cup Frozen Peas
- 1/4 Cup Red Onion, chopped
- 3/4 Cup Reduced Fat Mayonnaise
- 1 Tbs. Dijon Mustard
- 1 Tbs. Apple Cider Vinegar
- 1 Tbs. Chopped Fresh Tarragon
- 1/2 tsp. Salt
Preparation
Step 1
In pot over high heat, boil potatoes in enough salted water to cover. Bring to a boil. Reduce heat, simmer until potatoes are tender, 20-25 minutes. About 2 minutes before potatoes are done, add peas. Drain potatoes and peas, cool to room temperature. Cut potatoes into wedges. In large bowl combine mayonnaise, mustard, vinegar, tarragon and salt. Stir in potatoes, peas and onion until coated. Chill 1 hour or until ready to serve.
